Gambas Al Ajillo: Garlicky Shrimp Sauté or Spanish garlic shrimp is a very popular Spanish, Big juicy shrimp in olive oil, garlic sauce. It is perfect with some crusty bread. This recipe is one of the delicious and easiest Spanish dish you’ll ever make.

Ingredients

  • 12 garlic cloves
  • 1 pound large shrimp, peeled, shells reserved
  • 1/2 cup extra-virgin olive oil
  • Kosher salt
  • 1/4 teaspoon baking soda
  • Pinch red pepper flakes, or a 1-inch piece dried guajillo chili
  • 1 1/2 teaspoons sherry vinegar
  • 2 tablespoons chopped fresh parsley leaves

After preparing the ingredients, let’s jump straight to the cooking method. You are almost ready to taste the most delicious Spanish shrimp garlic recipe.

Methods/Steps

  1. Every 4 garlic cloves should be done separately. First, finely cut up or grind 4 garlic cloves and put it in a large bowl. Smash another 4 garlic cloves under the flat side of a knife and put it in a skillet pan. Then, thinly slice the remaining four garlic cloves and set it aside.

  1. Add that 1 pound large shrimp in a bowl with grinded garlic cloves. Add 3 tablespoons of olive oil, baking soda, and 3/4 teaspoon of kosher salt. Combine them thoroughly and set the bowl aside at room temperature
  2. Add those reserved shrimp shells to skillet pan with smashed garlic cloves. Add remaining olive oil and pepper flakes. Set over medium-low to low heat and cook, by tossing and stirring occasionally, until shells are deep crimson red, garlic should be pale golden brown, and oil should be intensely aromatic, cook for about 10 minutes. Use the mesh strainer to strain through the shrimp shells to extract as much oil as possible. Discard shells and garlic.
  3. Place that flavored oil to skillet and heat over medium-high heat until shimmering. Add the sliced garlic and cook, constantly stirring, until pale golden brown, for about 1 minute. Add shrimp in the skillet pan and stir constantly until shrimp are barely cooked through, for about 2 minutes. Add sherry vinegar, and parsley and toss to combine. Season to taste salt and serve immediately.
