  • 1 tablespoon butter or neutral oil
  • 1 yellow onion, peeled and diced
  • 3 cloves garlic, peeled and minced
  • 2 teaspoons chili powder
  • Salt and pepper, to taste
  • 2 scallions, trimmed and minced
  • 2¼ cups vegetable stock or water
  • 1 cup long-grain white rice
  • ½ teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 14.5 ounce can black beans, drained and rinsed

Step by Step Instructions

  1. Cook the Aromatics:

    Put the butter or oil in a 4 quart pot over medium-high heat until it is hot and bubbly. Add the diced onion and saute for 5-7 minutes or until it becomes soft and translucent. You can also put minced garlic into the pot, then stir everything to blend them together before allowing another minute for its aroma to surround you.

  2. Bloom the Spices:

    Put some chili powder, cumin, smoked paprika, and cayenne pepper in the pot. Stir and coat onions and garlic well, stirring for 1 minute until spices smell good.

  3. Toast the Rice:

    Put the white rice into the pot and mix properly so that it’s coated with both spices and flavourings. Allow it to cook for one minute before incorporating black beans.

  4. Simmer the Rice:

    Pour in the vegetable stock or water bring to a boil. To taste,season with salt and pepper. Allowing it to reduce to a minimum heat, cover and let it simmer for 20 minutes, stirring occasionally.

  5. Finish the Black Beans and Rice:

    Switch off the heat, then wait for five minutes, the cover on for the rice to soak in the heat. The next step should be to remove the lid, put minced scallions and mix everything slightly. It is now time to cover it with some more scallions once again and let them steam for 5 minute.

  6. Let’s Serve the Black Beans and Rice:

    Now you can serve the hot black beans and rice, either in a burrito or as a side with your best grilled or roasted protein. Enjoy the nicely spiced and tasty dish.
