#1: Clean the Fish

Start by cleaning the fish fillets well and drying them with a paper towel. Cut the fish into medium pieces and put them aside.

#2: Make the Masala

Heat coconut oil in a big pan over medium heat then add some mustard seeds and wait for them to pop. Next, add curry leaves and cook them until they smell good. Add the chopped onions and cook them until they turn golden brown.

Now mix the ginger-garlic paste and cook for a minute. Add the chopped tomatoes and cook them until they soften and turn mushy. Mix in the turmeric powder, coriander powder red chili powder, and fenugreek seeds. Cook this mix until the oil starts to separate from the spices.

#3: Cook the Fish

Put the fish pieces in the pan and coat them with the spices. Cook for a few minutes to ensure the spices cover the fish . Pour in the coconut milk and add salt to taste. Also here, you can add some green beans if you like.  Now let the curry simmer and cook until the fish becomes tender and cooked. This should take about 10-12 minutes.

#4: Garnish and Serve

After the fish finishes cooking, add fresh coriander leaves on top of the curry to decorate it. Eat it while it’s hot alongside steamed rice or appam for a real South Indian meal experience.
