When I make this batter for the cake, it reminds me how pancakes were done or making muffins at home. All that has to be done is to mix up some dry stuff into a liquid, then add your shredded carrots as well as chopped nuts plus plumped up raisins, then the cake is ready. Isn’t is so simple? Come On! Ingredients for making the perfect Carrot Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups grated carrots
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts (optional)
Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 1/2 cup unsalted butter, softened
Step-by-Step Process for making perfect Carrot Cake:
1. First Preheat the Oven
Heat the oven to 350 degrees (175º c) and apply some oil in around 9 inch round cake pans.
2. Mix Dry Ingredients
Mix 2 cups of all purpose flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, 1 teaspoon of cinnamon powder, 1/2 teaspoon of nutmeg powder and 1/2 teaspoon of salt in a large bowl. You can put it aside for now.
3. Mix the following remaining Ingredients
In another large bowl, beat 4 eggs and 2 cups of granulated sugar until light and fluffy. Gradually add 1 cup of vegetable oil and 1 teaspoon of vanilla extract, mixing until well combined.
In a different big bowl, beat two cups of granulated sugar with 4 eggs until it’s light in color and gets fluffed up instead of being too heavy. Now you have to gradually add a cup of vegetabel oil and Vanilla extract with string well.
5. Add Carrots and Walnuts
Add 3 cups of grated carrots and 1 cup of chopped walnuts. Then fold in and mix them evenly in the batter.
6. Bake the Carrot Cake
Pour the batter equally into the ready cake pans then bake in the oven preheated at 25-30 minutes or until the cakes are done in the middle.
7. Cool the Cakes
Now let the cakes cool in teh pan for about 10 minutes or more.
8. Prepare the Cream Cheese Frosting
Use a medium mixing bowl to mix 8 oz of soft cheese, and 1/2 cup softened salt free butter to form a smooth mixture. With it still in the bowl, keep beating sugar powder (1 tbsp) vanilla essence (4 tbsp) bit by bit while stirring thoroughly each time; this way the resulting icing will appear creamy as well as smooth, respectively.
9. Frost the Cake
Spread a layer of frosting on the top one of the cake layer after the cakes are left to cool completely. After placing the second cake layer on top, frost the remaining frosting on the sides and top of the cake.
