  • 500g (1 lb) chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons fermented black beans, rinsed and mashed
  • 1 onion, sliced
  • 1 bell pepper, sliced (red, green, or yellow)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch, mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil for frying
  • 2 spring onions, chopped for garnish
  • Steamed rice for serving

Recipe: The directions of making chicken in Black bean Sauce

Step 1: Marinate the Chicken

  • Put the chicken pieces in a bowl and pour over 1 tablespoon of soy sauce and 1 tablespoon of rice wine or dry sherry.
  • Allow the chicken to marinate, preferably for not less than 15 minutes, to allow the flavors to massage the chicken.

    Step 2: Prepare the Black Bean Sauce

  • Warm the vegetable oil in a large skillet or wok until its surface attains medium heat.
  • Now add in the minced garlic and ginger and stir fry for approximately 30 seconds, depending on the intensity of the flame.
  • Stir in the mashed black beans, and that should fry for another 1 minute around the wok.

    Step 3: Cook the Chicken and Vegetables

  • Bring the heat to high and as a result, add the marinated chicken to the skillet thoroughly.
  • Cook the chicken for 5-7 minutes so as to ensure that it is thoroughly cooked and a little crispy.
  • Sauté the vegetable for about 2 minutes until the vegetables are cooked with slight crispness, then add the sliced onion and bell pepper.

    Step 4: Mix and Serve

  • Add in the balanced soy sauce, oyster sauce, sugar and cornstarch slurry. Mix thoroughly so that the chicken and the vegetables will absorb the sauce.
  • Stir for another 2-3 minutes or until sauce has thickened and everything is well incorporated.
  • Top with finely chopped spring onion and serve hot, preferably over rice.
