Coconut Curry Ramen – Spicy, Delicious & Homemade | Step By Step Guide

Coconut Curry Ramen is very popular because it is pretty easy and fast to prepare. It is slightly spicy and creamy which makes its taste heavenly. It makes a perfect meal that family and friends can enjoy together.

In this recipe, i combined many ingredients to give a huge flavor. I combined fish sauce, soy sauce, and red curry paste with coconut milk.

Let me give you a step by step guide to make a perfect coconut curry ramen:

Ingredients

  • 6 tbsp toasted sesame oil divided
  • 6 ⅗ ounces shiitakes torn
  • 2 tbsp freshly grated ginger
  • 8 garlic cloves grated
  • 8 cups chicken broth or vegetable
  • 1 tsp ground turmeric
  • 1 tsp brown sugar
  • 4 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp sambal or other chili paste to taste (optional)
  • 4 tbsp mild red curry paste
  • 2 can (14 oz/400 g) unsweetened coconut milk full fat
  • 2 tbsp lime juice
  • 18 ounces instant ramen noodles
  • 8 boiled eggs cooked for 7 minutes
  • chili oil for serving
  • sesame seeds for serving
  • chopped chives for serving

Methods / Ingredients

  • Cook noodles in a pot of boiling water for about 2 to 3 minutes until it becomes soft. Rinse the noodles in a cold water and then, set aside after draining.
  • Heat 1 tablespoon sesame oil in a stockpot over a medium heat. Add prepared shiitakes into a pot after tearing them into pieces and cook until shiitakes turn into slight brown. 
  • Sprinkle 1 tablespoon sesame and season with pepper and salt. You should cook until it turns crispy. Remove them from the pot.
  •  Reduce the heat to low to medium. Add grated ginger and garlic after 1 tablespoon sesame oil. Cook until the fragrant reaches your nose, about 1 minute. Add a chicken broth in a pot, and stir with a spoon (wooden recommended) while scraping up the brown bits from the bottom of a pot. Boil the broth.
  • After that, add brown sugar, turmeric powder, fish sauce, and soy sauce. Then, stir them in a sambal and red curry paste. Squeeze in lime juice over and add coconut milk. When broth starts to boil, add drained ramen noodles and cook for about 2 minutes.
  • Serve immediately with chili oil, chives, sesame seeds, and shiitakes. Top with boiled eggs.
