Jollof Rice – Popular West African Dish

Jollof Rice is one of the most popular West African Dish which can be served as both main dish or side dish. This dish is made with onions, spices, tomatoes, long-grain rice, and sometime other vegetables and/or meat in a single pot. Its preparation methods and ingredients vary across different regions.

Ingredients to make Jollof Rice

  • Blend tomato and pepper

    • Chop 100g of tomatoes
    • deseed 275g of red pepper
    • 1 scotch bonnet chili
    • Chop 50g of onion
  • Rice

    • 25g garlic, peeled
    • 25g ginger, peeled
    • 70ml olive oil
    • 120g red onion, finely sliced
    • 5g white peppercorns
    • 3g curry powder
    • 3g dried thyme
    • 3 curry leaves
    • 30g tomato puree
    • 300g chicken stock
    • 3 bay leaves
    • 300g long grain rice, washed well
    • 10g butter
    • chives, finely chopped, to serve (optional)

  • Blend tomatoes, red peppers, scotch bonnet chili and chopped onion in a blender until it becomes smooth.
  • Make a garlic and ginger paster.
  • Heat and put olive oil in a large saucepan over a medium heat.
  • Put the finely sliced onion and cook until soft and translucent, about 5 to 7 minutes max.
  • Put the tomato puree and stir it the for further 2 minutes.
  • Add the blended pepper and tomatoes mixture and stir them well and cook for about 10 to 15 minutes to reduce mixture and blend the flavors.
  • Add the washed rice to the pot, stirring to coat the rice with the sauce properly.
  • Pour the chicken soup and add the bay leaves and stir them.
  • Boil and reduce the heat to low.
  • Cover the tight-fitting lid for about 20 to 25 minutes, or until the rice is properly cooked and the liquid is absorbed. Remember to stir the rice occasionally from sticking it to the bottom.
  • One rice is cooked, remove the pan and stir in the butter. Let the rice covered for another 5 minutes.
  • Fluff the rice with a fork, and remove the bay leaves.
