Spaghetti Carbonara might be considered World’s favorite and classic Italian dish prepared using Pancetta. It is usually firm and dried strands such as spaghetti with creamy textures and is full of ingredients that are quite delicious but simple too.
Step by Step Process to make Classic Spaghetti Carbonara
Firstly you have to cut the pancetta or guanciale into small cubes. Then mix the Parmesan cheese with the Pecorino cheese. And in a bowl, crack the eggs, add in most of the grated cheese but keep a little for the topmost part before mixing.
Cook the Spaghetti:
Take a big pot and fill it with water, then add quite a generous amount of salt before letting it boil. Then add the spaghetti and cook for a while until it is ready. Generally it takes about 8-10 minutes for it to be al dente as per the instructions on the package. Before you drain it, keep aside one cup of pasta cooking water.
Cook the Pancetta:
Put the skillet on the fire over medium heat while pasta is being cooked. Then put some pancetta or guanciale into the skillet. Then put some garlic cloves therein whole. It will take about 5-7 minutes to cook. But remember that you have to just fry until it reaches a golden brown stage. At all times stir in order to cook evenly. Take the garlic cloves out of the skillet and discard it.
Combine Pasta and Pancetta:
Once the spaghetti is cooked and drained, quickly add it to the skillet with the pancetta. Then mix the pasta with pancetta letting the fat drip on its steaming surface.
Make the Sauce of Spaghetti Carbonara:
Remove the skillet from heat before the eggs screambled. Also make a creamy sauce by tossing continuously while quickly pouring the egg and cheese mixture over hot spaghetti soaked in the same water. The eggs will cook gently because of the warmth left behind by the pasta. And now add a bit at a time from reserved water used for boiling pasta as needed in order not make it too thick.
Finally Season and Serve:
Now you can add the freshly ground black pepper to the carbonara. And taste it, then add salt only in case it is necessary but remember, that pancetta and cheese are salty. Put the spaghetti carbonara onto a plate and sprinkle the remaining grated cheese over it. For an extra touch, decorate with fresh chopped parsley.
